Explore Japan: Handa – a historic town of Sake, Shoyu, & Su (Archive)

We will visit Handa City, famous for its sake (rice wine), shoyu (soy sauce), and su (vinegar) production. Sake production in Handa flourished from the early 17th century. Sake was transported to Edo (now Tokyo) by sea. Handa succeeded in producing vinegar using sake lees, and even today it leads Japan in vinegar production. Ships from Edo returned with soybeans that brewers used for soy sauce and miso (soybean paste) production.
At this event, we will visit museums related to sake and vinegar brewing and learn about the historical development of the brewing industry. There are also old buildings along the canals in Handa, so we will explore the brewing town by walking around the city.

We will welcome international graduate students in the greater Nagoya area.

Destination: The Handa Canal area, Handa city, Aichi prefecture.

Meeting place & Time: Parking lot area, Toyoda Auditorium, Nagoya University 9:15 a.m. The bus departs the campus at 9:30 a.m. sharp.
